MEXICALI FRITTERS
 
Ingredients:

¼ cup vegetable oil
1 19 oz. can black beans
1 medium zucchini
2 eggs
½ cup plain breadcrumbs
1 package taco seasoning mix
¼ cup shredded Monterey Jack cheese
1 cup salsa

Prep time: 30 minutes.
Total time: 30 minutes.
 
Method:

Heat the vegetable oil in a 12" saute pan over medium-high heat.

Rinse and drain the black beans.

Grate the zucchini with the skin on. Squeeze with a paper towel to remove excess moisture.

In a 3-qt. mixing bowl, mash the beans roughly until you have a mixture of mashed and almost whole beans. Stir in eggs, zucchini, breadcrumbs, taco seasoning mix, and cheese.

Drop in large tablespoonfuls into the pan and flatten with the back of the spoon. Brown for 2-3 minutes on each side, until set and crisp.
Top with the salsa and serve.

Serves: 4
