Carrot Parsley Soup – Winter Soup Recipes
Stir the parsley before digging in. The flavor of parsley makes the traditional carrot soup special!
Serves: 6 Preparation: 15 minutes Cooking Time: 60 minutes
Ingredients
– 700 g of carrots – 1.5 liters of broth – 3 tablespoons tablespoon of parsley chopped – salt , pepper
Directions
1. Peel carrots, cut into the slices, then cook in broth with salt and pepper for about 1 hour. Alternatively, pressure cook for 20 minutes.
2. Reserve the broth and puree the carrots in a blender.
3. Mix the broth and carrot puree, warm over flame and adjust seasoning.
4. Sprinkle with chopped parsley and serve.
