Corn & Cheese Quesadillas – Recipes and Instructions on Making Basic Quesadillas
Stuff tortillas with cheese and buttered corn to make tasty quesadillas to feed a crowd.
Ingredients:
- 1 pkg. Corn Tortillas – 12 nos.
- 2 cups grated cheddar cheese
- 1-1/2 cups steamed or cooked tender corn
- Juice of 1 lemon
- Salt
- Pepper
- Butter – for corn as well as for toasting quesadillas
Makes: 24 Quesadillas
Serves: 8-10
Directions:
1. Heat a cast iron frying pan or a griddle.
2. Add 1 teaspoon of oil and spread over the surface.
3. Place a cornflour tortilla over the oil.
4. Spread 2 and a half tablespoons of grated cheese over half of the tortilla surface.
5. Top the cheese with 2 tablespoons of corn.
6. Now flip the plain half of the tortilla over the other half with the filling being sandwiched in between.
7. Use a spatula (or two) to flip the tortilla to the other side.
8. Cook on both sides till crisp.
To Serve: Cut in half to form two quarter shapes. Serve with a dip of your choice.
