Cream of Celery Soup – Winter Soup Recipes
A creamy combination of celery and potatoes

Ingredients
- 400 g of celery, broken into branches
- 200 g of potato
- 200 g of white leeks
- 3 onions
- 1 liter stock (or 2 cubes)
- 30 g butter or margarine
- 2 tablespoons oil salt, pepper
Directions
1. Wash the celery and leeks. Peel the onions and potatoes. Chop celery and leaves, leeks and onions. Cut the potatoes into cubes of 1-2 cm.
2. Heat the broth (or 1 liter of water and 2 cubes). Heat butter and oil in large skillet. Add onions, leeks and celery and transfer to a large saucepan.
3. Pour the broth over the vegetables, add diced potatoes and let simmer in the broth for 20 minutes.
4. Blend the soup and adjust seasoning if necessary. Serve piping hot with sprigs of chervil or thyme(optional).
