Easter Sausage Strata – Low Calorie Easter Recipes

Sausage, cheese, and bread might not sound low-cal but this main course will give your guests satisfaction knowing they are only eating 250 calories per serving. It’s healthy, it’s delicious and it’s very filling!

• ½ pound turkey breakfast sausage with casing removed • Two cups of chopped onions • One red bell pepper, seeded and chopped • Twelve large eggs • Four cups of skim milk • Salt and pepper to taste • Six cups whole-wheat bread, cubed • One tablespoon Dijon mustard • 1 ½ cups Swiss cheese, grated

1.) Spray a 3-quart baking dish with cooking spray.

2.) Place sausage in a skillet and cook over medium heat. Crumble the sausage with a wooden spoon while cooking. Cook 3-4 minutes or until browned and transfer to a plate lined with paper towel to allow it to drain. To the pan, add the onions and the pepper and cook until they are soft, 3-4 more minutes.

3.) In a separate bowl, whisk together eggs, milk, salt and pepper until they are well combined.

4.) Lay the bread in the bottom of the baking dish. Divide the sausage and onion mixture over the bread evenly. Brush the mixture with Dijon mustard. Sprinkle the cheese over the mustard and then pour in the egg mixture. Cover the entire dish with plastic wrap and allow to sit in the fridge for at least two hours.

5.) Preheat oven to 350 degrees Fahrenheit. Allow the strata to cook uncovered for 55-65 minutes, until it is brown and fluffy and set in the centre. Cool for 5 minutes and serve hot.
