Herbed Yogurt Cheese – Low Calorie Easter Recipes
Not only does this dish have only 20 calories per tablespoon, it will provide your guests with something truly different from the ordinary Easter fare. You will need:
Six cups of low-fat yogurt Two scallions, trimmed and minced Two tablespoons fresh parsley, chopped One tablespoon basil, chopped One clove of garlic, minced ½ teaspoon salt ¼ teaspoon pepper
1.) Line a colander with a large, thick paper towel or a double thickness of cheesecloth. Place the yogurt in the towel and put the colander in the sink. Allow to sit for fifteen minutes before placing the colander in a bowl. There should be enough room in the bottom of the bowl for liquid to drain out. Cover the colander with plastic wrap and place the bowl and colander in the fridge for 24 hours. After that time, remove from the fridge and squeeze out any remaining liquid. The product is now yogurt cheese. Place the yogurt cheese in a separate bowl. Can be kept in the fridge for up to one week.
2.) Mix the yogurt cheese with the remaining ingredients and serve.
