Irish Lamb Stew, St. Patrick’s Day Recipes

Lamb meat and stew are both very popular foods in Ireland so it only makes sense to put them together for a tasty concoction. Here are the ingredients:

What you will need:

• A leg of lamb that is between three and four pounds • 2 tablespoons butter • 1 tablespoon vegetable oil • 2 cups water • 1 cup chicken broth • 1 to 2 tablespoons salt • ¼ teaspoon crushed thyme • ¼ teaspoon pepper • 2 cloves garlic, minced • 4 medium potatoes, quartered • 8 small white onions, quartered • 1 package frozen peas (16 ounces) • 8 ounces fresh mushrooms, sliced • 1 cup milk • 1/3 cup flour

Directions:

1. Cut the lamb into 1-inch pieces. Place a stockpot of Dutch oven over medium heat and brown the lamb pieces with butter. Once the lamb has browned, add water, stock and seasonings. Cover the pot and simmer the mixture for one hour, skimming the fat regularly.

2. Add the potatoes and onions to the mixture and allow to simmer until the vegetables are tender, approximately twenty minutes. Add peas and let simmer for an additional five minutes.

3. Mix milk and flour in a separate bowl and then add to the pot. Simmer until stew thickens.
