Rich Brown Sauce – Thanksgiving Recipes
This sauce can be served with any roast poultry
Ingredients:
- 2 oz (50 gm.) streaky bacon, rind removed, chopped
- 2 oz (50 gm) margarine
- 1 small onion, chopped
- 1 tomato, chopped
- 1 small carrot, chopped
- 1 tbsp chopped mushrooms
- 2 oz (50 gm) plain flour
- 1 pt (550 ml) stock
- 1 tsp mixed dried herbs
- salt and pepper
- 1 tbsp sherry
Method:
1. Fry bacon, add vegetables and fry till light golden.
2. Stir in flour and cook for 1 minute. Add remaining ingredients except sherry and bring to boil. Cover and simmer for 40 minutes.
3. Skim surface. Sieve, return to cleaned out pan, reheat and taste for seasoning.
4. Stir in sherry just before serving.
