The No.1 Veggie Burger Recipe
Need a veggie burger recipe that you are doing to love? Try the best recipe of them all – Garbanzo beans (or Chickpeas) and Flax seed burgers. And what’s more – it is open to all adaptations you fancy!
Not all good things have to be complicated. We give you a simple recipe that is delicious to eat and can be made as fancy as you would like to have it. Let’s begin with the basic recipe:
Ingredients
For the Patties
- Garbanzo beans or Chickpeas, cooked or canned – 400 grams or 14 oz (1 tin)
- Whole wheat flour – 1 tbsp
- Bread crumbs – 5 tbsp
- Onion, peeled and chopped – 1
- Garlic, peeled and crushed – 1 to 2
- Chilli powder – 1/2 tsp.
- Dried, mixed herbs – 2 tbsp. (basil, cumin, thyme, oregano or mixed spice)
- Flax seeds, ground – 2 tbsp
- Salt and Pepper, to taste
- Vegetable Stock – 1/2 cup
- Cooking Oil – 2 tbsp
For the Burgers:
- Burger Buns – 4
- Lettuce
- Tomato, sliced
- Vegan or Vegetarian Mayonnaise
- Vegetarian Cheddar, Slices or Grated
- Tomato Ketchup (optional)
Directions
1. Heat 1 tbsp. oil and saute onions and garlic until tender.
2. Add the seasoning and cook for a minute or so.
3. Add 1/4 cup vegetable broth and reserve the rest for using later, if required, to form the patties.
4. Add crushed or blitzed beans and spices and cook for 2 minutes.
5. Remove from heat and let cool.
6. Mix flax seeds with 3 tbsp. warm water and set it aside till it begins to form a gel-like consistency.
7. Add bread crumbs, flour and the gelled flax seeds and mix well with hands or using a food processor.
8. Shape the mixture into 4 regular sized, or 7-8 smaller patties. Brush the remaining oil over them.
9. Place on a lined sheet and bake in a 350 degree oven for 5 minutes on each side.
To serve, slice the buns horizontally. For a low calorie option, stack lettuce, burger patty, sliced tomato and a tablespoon of mayonnaise. For a cheese burger, place a slice or grated cheddar on the lower half and grill in the oven till it melts. Then stack like above.
Variations
This basic veggie burger recipe works with many variations. You can replace onions with any vegetable you wish to add to the patty. Try chopped peppers, carrots, potatoes, peas or even mixed vegetables.
You can also use different types of flours for binding. Chickpea flour or regular flour works great.
And finally, if you do not have bread crumbs, you can use leftover, cooked brown rice or quick-cooking oats.
