Winter Bean and Lentil Soup – Winter Soup Recipe
A hearty soup to warm up on cold winter evenings
Serves: 4 Preparation: 10 minutes Cooking Time: 30 minutes
Ingredients
250 g of beans 150 g of lentils 100 g of vegetable soup (leeks, carrots, celery), julienned 1/2 liter of broth 1 egg yolk 20 g butter 1 tablespoon vinegar 100 g of bacon or bread croutons and a few blanched in boiling water salt and freshly ground pepper
Directions
1. The night before, soak the beans and lentils separately in cold water. 2. Fry the julienned vegetables in butter, drain the beans and lentils. Pour all into a pot and cover with broth. Add vinegar and season to taste. Cook over low heat for two hours. Alternatively, pressure cook for 20-25 minutes or till done. 3. Whisk the egg in a bowl, pour the hot broth and vegetables over. 4. Finally, add the croutons or bacon and serve immediately.
