Quick Cucumber Mousse, Christmas Party Appetizers

Serves 4

½ cucumber 5 fl oz(150 g) carton natural yogurt 4 oz (100 g) curd or cream cheese ½ lemon, juice only a little ground coriander 2 teasp gelatine

1 Cut a few thin cucumber slices and reserve. Shred or grate the remainder, peeled or unpeeled, as you prefer. 2 M ix with yogurt and cheese. Season,. Flavour with lemon juice and coriander. 3 Set mixture with geletine dissolved in 2 tablesp water. When it begins to stiffen, turn into mould and leave at least 1 hr at cool room temp.

To serve: turn out, garnish with cucumber slices. Serve with thin brown toast.
