Spaghetti with Fresh Tomatoes – Kids’ Lunch Box Idea
Ingredients:
12oz spaghetti 3fl oz extra virgin olive oil 2 cloves garlic crushed 4 spring onions sliced 6 plum tomatoes peeled seeded and diced handful ripped basil leaves salt and ground black pepper
Serves 4
Directions:
1. Cook spaghetti in plenty of boiling water as instructed on the packaging. Drain and toss with 1fl oz of the olive oil.
2. Meanwhile heat the remaining olive oil in a frying pan and cook the garlic until golden then discard the garlic.
3. Add the spring onions and tomato to the oil and cook for 1 minute.
4. Turn off the heat and add the basil and spaghetti to the pan. Toss to combine and season to taste.
